Grilling with fresh herbs is easy if you know a few basic rules. Whether you toss them into a marinade, thread them through skewers or pop them in foil packets, fresh herbs add a whole new dimension to open-flame cooking!
For a smokey flavor, soak bunches of sage or rosemary in water for a few minutes, then lay the damp herbs across the hot coals. Replace the grill rack, cover the meat and enjoy the sweet aroma and bold flavors.
In addition, try laying fresh herbs directly on the grate and place the meat on top of them. Herbs such as thyme, lemon verbena or tarragon work well with this method.
Softer herbs, like sage, mint, oregano and lemon balm, work best in a foil packet or marinade. For foil packets, place sprigs of whole herbs, on a sheet of aluminum foil. Add meat and/or vegetables, olive oil or butter (my favorite is ghee from Grass Fed Productions) and seal the ends tight before grilling.
